Ingredients
- 160gorganic quinoa
- 400gred beans
- 40gcrushed organic tomatoes
- 1small can of organic corn
- 2cloves of garlic
- 1lawyer
- a few sprigs of coriander
- olive oil
- 1Bouillon cube
- 1Ancho pepper
- 1Cumin
- salt
- pepper
Preparation tips
1. Prepare the broth by diluting 1 vegetable stock cube in 25cl of boiling water (13cl for 2 people).
2. Peel and finely chop the garlic. Brown the garlic for 30 seconds. over low heat in a pan with a little oil.
3. Rinse the quinoa in a fine sieve, add it to the pan with the red beans and drained corn, crushed tomatoes, spices, salt and broth. Bring to the boil then reduce the heat and simmer, covered, for 20 to 25 minutes. Find out at the end of cooking if you see that your dish is still too liquid.
4. While cooking, cut the avocado into cubes, chop the coriander.
5. At the end of cooking, add the avocado. Stir and serve immediately with the coriander, to be sprinkled on the plate according to individual tastes.
